Tacu-tacu con saltado de champiñones

Gloriosa mezcla tostada de menestras del dia anterior, a ser posible frejoles (tambien llamadas judias o porotos) y arroz. En esta ocasión acompañada de un veganísimo saltado o wok de champiñones.


Ingredientes 2p.
Tacu-tacu
- 1 taza de arroz cocido
- 1 taza de menestras cocidas (yo hice ayer unos pallares guisados tremendos!)



- 1/2 cebolla grande, picada finamente
- 1 diente de ajo picado fino o machacado
- 1 cucharadita de aji amarillo*
- aceite de freir, sal, pimienta y oregano.

Saltado
- 1/2 cebolla grande cortada en gajos delgados
- 1 tomate cortado en 8 gajos
- 1 aji amarillo cortado en tiras gruesas
- 200gr. de champiñones enteros o cortados
- aceite, vinagre, salsa de soja (sillao), sal, pimienta, perejil para adornar.

Preparación
En un recipiente mezclar arroz y menestras batiendo para formar un puré. Reservar.
En una sartén freir la cebolla, el ajo y el ají, unos 10 minutos a fuego bajo, al dorarse sazonar y verter la mezcla del recipiente.
Revolver y dejar que cueza para que se eliminen los liquidos y entonces empezará a tostarse. Hay que vigilar que no se pegue y si es preciso añadir un poco mas de aceite.


Se le va dando la forma redonda o cuadrada con una espátula, suavemente para que pueda formarse una costra por encima sin quemarse (mucho).
Cuando esté tostada de un lado darle la vuelta como la tortilla de patata, es decir poner un plato encima y volcar, luego devolverla a la sartén pero por el otro lado.

Ahora a hacer el saltado, en una sarten honda o wok calentar aceite, echar a la vez la cebolla, tomate y el aji, (y los champiñones, si son frescos) freir rapido y a buen fuego, sazonar, añadir el vinagre y el sillao, y luego los champiñones si son cocidos, revolver y retirar del fuego.
Servir inmediatamente sobre el tacu-tacu y adornar con perejil. Provecho.

Tacu-tacu is a wonderful way to re-use remaining food from yesterday, specially beans and rice. In this case we accompany with a super vegan champignon-wok.

Ingredients 2p.
For tacu-tacu
- 1 cup white rice, cooked
- 1 cup cooked beans (whichever white, red, chick peas, etc.)
- 1/2 big onion, finely chopped
- 1 clove garlic, finely chopped or smashed
- 1 teaspoon yellow aji paste*
- oil for frying, salt, pepper, oregan

For the wok
- 1/2 big onion, cut in stripes
- 1 tomato cut in 8 pieces
- 1 aji* or yellow pepper also cut in stripes
- 200gr. Champignons (fresh or can)
- oil, vinegar, soja sauce, salt, pepper and parsley for decoration.

Preparation
Mix the beans and rice in a bowl just to make a puree with them. Reserve.
Fry slowly the onions, garlic and aji paste in a pan, approx. 10' when it gets golden colour then add the puree and mix. Let it cook until it loose all liquid and then start to get toasted. You must check carefully that it does not stick onto the pan or burns, the fire must remain low. When it is done one side just turn up down like a potatoe-tortilla, that means, put a plate over the pan and turn it then return the tacu-tacu to the pan but with the roasted face up. Give round or squared form with a palette and when both sides are golden roasted just put in a plate and start preparing the wok.

Put oil generously in the wok pan, heat it high and throw in the onions, tomato, aji stripes and also the champignons (if they are fresh). Season with salt, pepper, vinegar and soja sauce, also generously; add after the champignons if they are canned, stir to mix everything and get quickly out of fire, it shall not be totally cooked! serve inmediately over the tacu-tacu. Enjoy!

Tallarines verdes / peruvian green pesto noodles

La versión peruana del pesto genovés reemplaza parcialmente la albahaca con espinaca y se acompaña el majado con un aderezo de cebolla y ajos, asimismo usa queso fresco en lugar del pecorino. El resultado es una salsa menos potente pero mas cremosa que la italiana, que vale la pena probar.


Ingredientes 4p.
- 1/2 kg. Tallarines, tagliatelle o cintas
- 1/4 kg. de espinacas
- 100 gr. de albahaca
- 1 cebolla cortada en cuadritos
- 2 dientes de ajo, molidos o machacados
- 150 gr. de queso fresco (feta o burgos salado)
- 1 puñado de nueces, pecanas o piñones
- 1 chorro de leche evaporada
- aceite de oliva, sal, pimienta
- queso rallado para decorar

Preparación
Poner a cocer los fideos en agua salada y con un chorrito de aceite de oliva para que no se peguen.
Mientras tanto hacer el majado, se remojan las hojas de espinaca en agua hirviendo un par de minutos, escurrir y reservar.
Aparte freir la cebolla y los ajos, cuando estan dorados añadir la espinaca escurrida y la albahaca, sazonar y rehogar ligeramente. Poner este aderezo en un vaso de licuar junto con el queso fresco desmenuzado, los frutos secos, y la leche (lo justo para que se pueda licuar) batir todo y verter esta crema sobre los fideos una vez colados.



Servir con queso rallado por encima o acompañar con un huevo frito... o dos!

The peruvian version of 'pesto genovese' replaces partially the basilic for spinach, the raw garlic for a mix of fried spices and the pecorino for white soft cheese, this mix make a less strong but creamy sauce that surely you will love to taste.

Ingredients 4p.
- 1/2 kg. Band noodles or tagliatelle 
- 1/4 kg. Spinach leaves
- 100 gr. Basilic leaves
- 1 onion finely chopped 
- 2 cloves garlic, smashed
- 150 gr. White salted cheese like Feta
- 1 handful walnuts or pinions
- some evaporated milk
- olive oil, salt, pepper
- some parmesan grated cheese

Preparation
First we start cooking the noodles in salted water with some olive oil, just not to get sticky noodles.
While the noodles cook let's start the sauce, put the spinach leaves in boiling water for 2 minutes so they are slightly smoothed, drain and reserve.
Then fry the onions and garlic in olive oil, when they get golden add the spinach and basil leaves, saison and let it cook slightly, then put this in a mixer together with the cheese, walnuts and milk (just a shot to make the mixing feasible), blend well and bring the sauce over the noodles (after cooked and drained)

Serve with grated parmesan or accompanied by one fried egg... or two!!

Soltero Arequipeño / Arequipenian Salad

Esta es una ensalada típica de la región Arequipa, rica en producción de hortalizas y lácteos, de ahí el uso intensivo de cebollas, habas, rocotos y queso en sus comidas.

   

 

Ingredientes 3p.
- 2 patatas cocidas cortadas en rodajas o mitades
- 1 choclo, maiz o elote, cocido y desgranado
- 1/2 taza de habas cocidas
- 150 gr de queso fresco, tipo feta cortado en cubos (para una versión vegana se puede usar tofu o queso de soya)
- 1 cebolla cortada en cuadraditos
- 1 tomate en cubitos o 6 tomatitos coctel
- 1 rocoto (pimiento rojo picante) picado en cuadrados
- 1/2 taza de aceitunas moradas tipo kalamata, sin pepas, troceadas en gajos.
- aliño: aceite de oliva, vinagre tinto, sal, pimienta, perejil picado.


Preparación
Cocer las papas, choclo y habas peladas, colar dejar enfriar y luego picar las papas en rodajas, desgranar el maiz, en caso de usar habas de conserva añadirlas directamente al bol.

Cortar aparte la cebolla, tomate, queso, rocoto y aceitunas en pequeños trozos, poner todo en un bol y mezclar con los granos de choclo y habas. Aliñar con aceite, vinagre tinto, sal y pimienta, echar por encima el perejil picadito. Dejar reposar un cuarto de hora antes de servir sobre una cama de papas y lechuga.

This is a salad typical from south Peru's region Arequipa, which is rich in production of vegetables and dairy, there comes the use of ingredients as onions, chili peppers or cheese in almost all their dishes.

Ingredients 3p.
- 2 cooked potatoes, cut in slices or halves
- 1 corn, only grains
- 1/2 cup broad beans peeled
- 50 gr white cheese (feta or similar) for vegan version tofu cheese can be used.
- 1 onion
- 1 tomato
- 1 rocoto* (red chili pepper)
- 1/2 cup of kalamata purple olives
- dressing: olive oil, red vinegar, salt, pepper and chopped parsley.

Preparation
Cook the potatoes, corn and peeled broad beans, cool down and cut the potatoes in slices, get off the corn grains and broad beans, in case of canned beans simply add them directly to the bowl.

Apart cut the onion, tomato, rocoto and cheese in small cubes so they can be easily taken in the salad.  Mix in a bowl together with the olives, corn grains and broad beans. Season with the dressing and let it rest 15' before serving over a bed of potato slices and salad leaves.

Cauche de queso con habas / Cheese "Cauche" with broad beans

Suculento guiso picante de cebollas, papas y queso derretido (¡como de caucho!), es tipico de la región de Arequipa. En esta ocasión acompañado de habas cocidas.

Ingredientes 3p.
- 1 cebolla roja cortada en gajos
- 2 dientes de ajo molidos
- 6 rebanadas de queso tierno, ahumado (que se pueda derretir bien)
- 4 papas cocidas y cortadas en 4
- 100gr de habas cocidas
- 1 cucharada de huacatay molido o una ramita si es fresco
- 1 cucharada de pasta de aji colorado
- Aceite, sal, pimienta, comino, aji-no-moto opcional y a gusto.
- Una taza de leche evaporada

Preparación
Freir las cebollas y ajos en un buen chorro de aceite, en cuanto se pongan algo transparentes añadir el aji colorado y el huacatay, remover, bajar el fuego y echar la leche. Sazonar y probar, tiene que picar si no este plato pierde su gracia.
Acomodar las papas y las habas cocidas en este caldo y colocar por encima el queso,



tapar y cocer a fuego muy bajito unos 10 minutos solo para que el queso se derrita sobre el guiso.
¡Servir de inmediato!

This spicy and juicy stew is made of potatoes, onions and covered with melted cheese (like rubber = cautchoc, where the name comes from), typical from Arequipa region at south Peru. For this time it is accompanied by cooked broad beans.

Ingredients 3p.
- 1 onion chopped in broad stripes
- 2 garlic cloves, smashed
- 6 slices of cheese, young, smoked, like for raclette (good for melting)
- 4 potatoes, cooked and divided in 4 pieces
- 100gr of broad beans, cooked
- 1 tb spoon of huacatay* (peruvian mint herb) paste or 1 branch if fresh
- 1 tb spoon of aji colorado paste*
- oil, salt, pepper, kummin, aji-no-moto*, as wanted
- 1 cup evaporated milk

Preparation
Fry onions and garlic in the oil, when becoming transparent add the aji paste and the huacatay, move a bit, low the fire and add the milk and seasonings. Taste the mix, it shall be spicy, otherwise it looses flavour.


Add the potatoes and broad beans to the stew, put the cheese slices over, cover the pot and let it cook 10 min.more in very low fire, just until the cheese is melted.
Serve inmediately!

Arroz con Mango / Mango Rice

Es la frase que para un peruano significa una combinación imposible, un desencuentro, una excentricidad. Pero aquí lo hemos convertido en un aromático postre, que no es otra cosa que un arroz con leche aderezado con pulpa de mango, coco rallado entre otras delicias que explico de inmediato.
 

Ingredientes 3-4p.
1 taza de arroz
2 tazas de agua
1 mango 
1 raja de canela
4 clavos de olor
3 cucharadas de coco rallado
1 cucharada de ralladura de naranja
1/2 lata de leche condensada
Un puñado de pasas

Se pone a hervir el agua junto con la canela y el clavo, cuando rompe el hervor echar el arroz y cocinar a fuego bajo unos 20 minutos. Mientras en un vaso de licuadora echar la pulpa del mango en gajos, dos cucharadas del coco rallado y la leche condensada, batir hasta que quede todo triturado.

Cuando el arroz haya cocido añadir esta mezcla junto con las pasas, la ralladura de naranja y mover lentamente para integrar bien con el arroz, si se seca agregar más agua hirviendo y no dejar de remover con un cucharón de palo unos 20 minutos más.


Servir y espolvorear por encima el coco rallado restante.
Demostramos así que el "arroz con mango" no sólo si es posible sino que además es delicioso y nutritivo.

This name means to a peruvian an impossible combination, to refer things that do not fit or are too excentric. Well, here we have literally made it as a dessert, which is no more than milky rice with mango smoothie and some coconut among others, as follows:

Ingredients 3-4 p.

1 cup rice 
2 cups water
1 mango -without skin and nut-
1 stick cinammon
4 cloves
3 tsp coconut, grated
1 spoon grated orange skin
1/2 can sugar condensed milk
A handful raisins

Boil the water with the cinammon and cloves, when it is boiling add the rice and let it cook by 20'. While cooking put in a mixer vase the mango chunks, 2 spoons grated coconut and the condensed milk, mix these until you have a nice smoothie.
When the rice is cooked add the smoothie to it, together with the raisins, the grated orange skin and whisk everything in the pot, with a very low fire, for approx. 15' more, if it gets dry just add some hot water and move constantly. Serve and sprinkle the rest of the coconut over.
Then we proof that not only the rice with mango is possible but also delicious and nourish!

Saltado de Berenjenas / Peruvian Aubergine Wok

El saltado es el "wok" peruano, se trata de freir rápido y a fuego alto verduras y/o carnes en un jugo de aceites, aderezos y vinagres. El saltado es para comer de inmediato, un plato práctico y delicioso.


Ingredientes
1 berenjena cortada en cubos
1 pimiento rojo o verde, en trozos
2 tomates, en cubos
1 cebolla, en trozos medianos
aceite vegetal
vinagre tinto
azúcar, sal, pimienta, al gusto
perejil / culantro picado, un puñadito
4 hojitas de albahaca fresca

Preparación
Encender el fuego fuerte y poner la sarten o wok con un buen chorro de aceite, primero freir los cubos de berenjena y rociarlos con sal y pimienta, dejar que sude un poco. Luego de un par de minutos añadir el pimiento y la cebolla cortados en trozos mas o menos del mismo tamaño que los cubos de berenjena, echar azucar sobre ellos, remover y esperar a que se doren. Por ultimo echar el tomate en cubos, el perejil, la albahaca y un chorro de vinagre, saltear todo por un minuto mas.
Sacar del fuego y servir con huevo frito, papas fritas, arroz blanco o si es un desayuno con rebanadas de pan.

The "saltado" is a peruvian "Wok", it is about frying quickly at high heat veggies and meat in a juice of oil, vinegar and spices. Very practical and delicious dish to be served inmediately after cooked.

Ingredients
1 aubergine, in 1" cubes
1 red pepper (or green, yellow, as wished)
1 onion, cut in chunks
2 tomatos, in cubes
vegetal oil
red vinegar
sugar, salt, pepper, as desired
fresh chopped parsley, coriander, 1 tsp.
4 basilic leaves

Preparation
Fry in a wok or a pan first the aubergine cubes with salt, pepper and a generous shot of oil, let them sweat some minutes. After add the pepper and onion in chunks more or less the same size of the aubergine cubes, rain with sugar, let them a bit gold and then add the tomato cubes, parsley, basilic and a shot of vinegar, mix and continue frying one minute more.
Serve inmediately together with white rice, fries, omelette or if breakfast just with some bread loaves.

Pionono / Milky Caramel Roll

Este postre es bien popular en el Perú y en Latinoamérica en general, en especial por su rellenito con manjar blanco o dulce de leche, en España se conoce como "brazo de gitano" y se rellena con crema de nata u otros dulces. En este caso lo hemos aromatizado con Pisco y vainilla, puede llevar también esencias de limón o naranja.


Ingredientes (8p)
- 3 huevos
- 3 cucharadas de azúcar
- 3 cucharadas de harina
- 1 cucharadita de bicarbonato de sodio
- 1 pizca de sal
- un chorrito de leche
- un chorrito de Pisco
- 2 gotas de vainilla
- dulce de leche para untar o una lata pequeña de leche condensada*
- cacao en polvo (se puede usar también azúcar glass o coco rallado)

Preparación
Forrar con papel manteca una bandeja de hornear (rectangular de unos 25 x 20 cm.) y reservar.
Separar los huevos en clara y yema. Batir las claras a punto de nieve con el azúcar, incorporar las yemas, luego la harina tamizada con el bicarbonato y la sal, por ultimo agregar la leche, la vainilla y y el pisco. Una vez todo bien mezclado verter sobre la bandeja y llevar a horno precalentado a 200ºC por 15 minutos.
Después de sacar del horno procedemos a desmoldar sobre un paño húmedo, extendido y espolvoreado con el cacao, con mucho cuidado retiramos el papel manteca y untamos con el dulce de leche* a gusto.
En seguida hay que enrollar el Pionono por el lado mas corto del rectángulo, es decir con el eje paralelo al lado mas largo- ayudándonos con el paño y lo colocamos sobre la fuente a servir.

 Si hace falta se pone mas cacao en polvo u otro topping que se quiera, puede ser mas dulce de leche o nata, según se quiera.

*Nota: El dulce de leche es una crema espesa de leche y azúcar, de color caramelo, que se puede hacer cociendo la lata de leche condensada en baño maría por media hora en la olla a presión o un par de horas en olla normal.

This dessert is very popular amongst Peru and Latinamerica in general, specially for its milky-confiture filling, in Spain is also known as Brazo de Gitano (Gypsy-Arm) filled with whipcream or another sweeties. In this case we have also given some Pisco and vanille aroma to the dough, although lime or orange extracts could be used, too.

Ingredients
- 3 eggs, separated whites and yolks
- 3 tbsp. white sugar
- 3 tbsp flour
- 1 teesp. sodium bicarbonate powder
- 1 pinch of salt
- a shot of milk
- a shot of Pisco (peruvian grape distillate spirit)
- 2 drops of vanilla scence
- 1/2 cup of milk confiture or a little can of condensated milk*
- topping: cocoa powder, or grated coconut or glass sugar.

Preparation
Cover a rectangular baking tray (of 25 x 20 cm) with baking paper and set aside.
Then separate egg whites from yolks and mix the whites with sugar until hard meringue consistence, then add the yolks, the flour sifted together with baking powder and salt. At least add the milk, vanilla scence and pisco (or other scences that you might add). Pour the mix on the tray forming a 2" dough layer (aprox.) and bring to pre-heated 200º C oven for 15 minutes.
After we take out from over and put face under on a humid cloth previously sprinkled with cocoa powder or sugar powder, then carefully remove the baking paper and spread generously the milk confiture on the surface.
Once you got it just roll the Pionono by the shortest side, helping yourself with the cloth. Put the roll on the serving tray, and sprinkle with more cocoa, sugar, coconut, cream or whatever sweets you would like to.
* How to make milk confiture? If you have got condensated milk just boil the closed can in water, 30' for express-pot and 2 hours for normal pot. Then let it cool down, open and voilà!
