Este postre es bien popular en el Perú y en Latinoamérica en general, en especial por su rellenito con manjar blanco o dulce de leche, en España se conoce como "brazo de gitano" y se rellena con crema de nata u otros dulces. En este caso lo hemos aromatizado con Pisco y vainilla, puede llevar también esencias de limón o naranja.
Ingredientes (8p)
- 3 huevos
- 3 cucharadas de azúcar
- 3 cucharadas de harina
- 1 cucharadita de bicarbonato de sodio
- 1 pizca de sal
- un chorrito de leche
- un chorrito de Pisco
- 2 gotas de vainilla
- dulce de leche para untar o una lata pequeña de leche condensada*
- cacao en polvo (se puede usar también azúcar glass o coco rallado)
Preparación
Forrar con papel manteca una bandeja de hornear (rectangular de unos 25 x 20 cm.) y reservar.
Separar los huevos en clara y yema. Batir las claras a punto de nieve con el azúcar, incorporar las yemas, luego la harina tamizada con el bicarbonato y la sal, por ultimo agregar la leche, la vainilla y y el pisco. Una vez todo bien mezclado verter sobre la bandeja y llevar a horno precalentado a 200ºC por 15 minutos.
Después de sacar del horno procedemos a desmoldar sobre un paño húmedo, extendido y espolvoreado con el cacao, con mucho cuidado retiramos el papel manteca y untamos con el dulce de leche* a gusto.
En seguida hay que enrollar el Pionono por el lado mas corto del rectángulo, es decir con el eje paralelo al lado mas largo- ayudándonos con el paño y lo colocamos sobre la fuente a servir.
Si hace falta se pone mas cacao en polvo u otro topping que se quiera, puede ser mas dulce de leche o nata, según se quiera.
*Nota: El dulce de leche es una crema espesa de leche y azúcar, de color caramelo, que se puede hacer cociendo la lata de leche condensada en baño maría por media hora en la olla a presión o un par de horas en olla normal.

In this case we have also given some Pisco and vanille aroma to the dough, although lime or orange extracts could be used, too.
Ingredients
- 3 eggs, separated whites and yolks
- 3 tbsp. white sugar
- 3 tbsp flour
- 1 teesp. sodium bicarbonate powder
- 1 pinch of salt
- a shot of milk
- a shot of Pisco (peruvian grape distillate spirit)
- 2 drops of vanilla scence
- 1/2 cup of milk confiture or a little can of condensated milk*
- topping: cocoa powder, or grated coconut or glass sugar.
Preparation
Cover a rectangular baking tray (of 25 x 20 cm) with baking paper and set aside.
Then separate egg whites from yolks and mix the whites with sugar until hard meringue consistence, then add the yolks, the flour sifted together with baking powder and salt. At least add the milk, vanilla scence and pisco (or other scences that you might add). Pour the mix on the tray forming a 2" dough layer (aprox.) and bring to pre-heated 200º C oven for 15 minutes.
After we take out from over and put face under on a humid cloth previously sprinkled with cocoa powder or sugar powder, then carefully remove the baking paper and spread generously the milk confiture on the surface.
Once you got it just roll the Pionono by the shortest side, helping yourself with the cloth. Put the roll on the serving tray, and sprinkle with more cocoa, sugar, coconut, cream or whatever sweets you would like to.
* How to make milk confiture? If you have got condensated milk just boil the closed can in water, 30' for express-pot and 2 hours for normal pot. Then let it cool down, open and voilà!

Tallarines Rojos / Red Noodles (peruvian vegetarian bolognese)
La versión peruana de la boloñesa italiana, que incorpora ingredientes locales a la tradicional salsa de carne picada y verduras, puede ser perfectamente adaptada a la forma vegetariana sin perder su gran sabor.
Ingredientes 4p
- 1/4 kilo ó medio paquete de fideos tallarin o espagueti (yo encontré estos de tarwi y quinoa en la tienda bio)
- 4 tomates pelados o bien 2 cucharadas de concentrado de tomate
- 2 cucharadas de aji colorado en pasta o dos cucharaditas si es en polvo.
- 1 cebolla cortada finamente
- 2 dientes de ajo, molidos
- 1 zanahoria rallada
- 1 tallo de apio picado bien fino
- dos docenas de aceitunas negras sin hueso
- 1 hoja de laurel
- 1 hongo seco
- 1 vaso de vino tinto
- aceite de oliva, sal, pimienta, albahaca
- queso rallado
Preparación
Primero poner los fideos a cocer en abundante agua hirviendo con sal y un punto de aceite de oliva. Colar y reservar.
En paralelo hacer el sofrito de cebolla y ajos, una vez que esten dorados añadir los tomates hechos puré o la pasta de tomate y el aji colorado, el apio y la zanahoria rallada, dejar friendose a fuego medio un par de minutos.
Luego echar el vasito de vino, las aceitunas y los condimentos. Cocinar a fuego lento hasta que se evapore el alcohol del vino y la salsa coja consistencia. Si se ve muy espesa añadir agua hirviendo para soltar.
Servir una porción de fideos con la salsa por encima y espolvorear queso rallado.

The peruvian version of italian bolognese sauce while adapting local ingredients to the famous minced meat and vegetables sauce is also possible to turn to a vegetarian dish without losing its wonderful taste. Lets see how!
Ingredients 4p
- 250 gr. (half bag) of spaghetti noodles
- 4 peeled tomatoes or 2 spoons of tomato paste
- 2 tablespoons of aji colorado* paste or 2 teaspoons if powder
- 1 onion, finely chopped
- 2 cloves garlic, smashed
- 1 carrot, grated
- 1 branch of celery, finely chopped
- 2 dozens black olives, without seeds
- 1 glass red wine
- 1 leaf laurel
- 1 dried mushroom
- olive oil, salt, pepper, basilic
- grated cheese
Preparation
First cook the noodles according the instructions in the package, normally about 8-10min. in salted water and a bit of olive oil.
For the sauce we fry first the onions and garlic in the saucepan, once gold couloured we add the smashed tomatoes or tomato paste, the aji paste, the celery and the carrot, let them fry in medium fire some minutes before adding the wine, the olives and the seasonings. Then turn the fire to low until wine alcohol is evaporated and the sauce has a good consistence.
Serve the sauce over the noodles and sprinkle with grated cheese!!

Papa Rellena (de setas) / Filled Potatoes (with mushroom)
Exquisito manjar en el cual hemos reemplazado la carne molida del relleno por unos sabrosos hongos o setas, un poco laborioso por la masa de patata pero que ¡vale la pena probar!
Ingredientes 2p
- 1/2 kilo papas
- 1/2 kilo papas
- 1 huevo
- 1 cebolla cortada en cubitos
- 1 diente de ajo picado fino
- 100 gr. de setas
- 6 aceitunas negras
- 2 cucharadas de pasas
- 2 cucharadas de maní tostado molido
- 1 huevo duro
- harina para freir, media tacita
- aceite, sal, pimienta, una pizca de azúcar, perejil, aji-no-moto* y un chorrito de vinagre.
Preparación
Poner las papas peladas a cocer en agua salada.
Mientras cuecen hacer el relleno, freir las cebollas y el ajo, añadir las setas escurridas y picadas, dejar que doren. Sazonar al gusto. Luego de unos minutos apagar el fuego y mezclar con las aceitunas, mani tostado, huevo duro y pasas, todo picado finamente para que el relleno pueda ser manejable.
Cuando esten cocidas las papas, escurrirlas y aplastar con el pasapuré; se puede añadir sal y pimienta para dar gusto a la masa. Dejar enfriar y luego añadir un huevo crudo, amasar con las manos añadiendo algo de harina principalmente para que la masa no se pegue, tarea por demas tediosa pero ni modo: Formar bolas de masa como un puño, en cada bola hacer un agujero con los dedos y colocar una cucharada de relleno, luego cerrar cuidadosamente y empapar la bola con un poco de harina. Reservar hasta terminar con toda la masa.
Finalmente freir las bolas de papa rellena en abundante aceite caliente, colocandolas con sumo cuidado y moviendolas solo para que doren por todos lados.
Servir con sarsa de cebolla**, salsa de rocoto, arroz blanco o como en este caso con una buena salsa huancaína. ¡Que aproveche!
*ajinomoto (glutamato monosodico) es un condimento de origen japones tambien conocido como umami. Su uso es totalmente opcional.

- 2 tsp. ground roasted peanuts
- 1 boiled egg
- flour for frying, half cup
- oil, salt, pepper, a pinch of sugar, red vinegar, persil and monosodic glutamate (aji-no-moto).
Preparation
Boil the potatoes in hot water and salt. In the meanwhile, prepare the filling, fry in a pan the onion, and garlic, add the mushrooms, season and fry until they look gold brown. Set the fire off and add the peanuts, raisins, olives and the chopped boiled egg, stir well and save for later.
When the potatoes are cooked, drain, let them cool down, peel and smash them to a puree, add the egg and season with a bit of salt and pepper, with both floured-hands start making dough-balls of 3" diameter approx. Take one ball and make a hole in the center to put one tablespoon filling inside, then close the ball with the surrounding dough, do it carefully using your fingers, giving more or less a round form and finally soak the exterior with some more flour. I know this is very, very tricky but its only a matter of practice, believe me!
Once the complete dough is used we are ready for frying our filled balls in a pan with a lot of oil, but at low fire, in order not to burn or brake them. Move them as little as possible, just only to toast all sides of the balls, remember how fragile they are!
Serve alone as a starter, or with white rice as main dish. You can always accompany with a salad, with Onion Sarsa* and /or with Huancaina sauce.
*Bonus tip: Onion Sarsa is a peruvian marinated onion salad, you slice one onion into long strips and submerge it into a mix of lime juice, chopped green or yellow aji, salt, pepper, coriander and olive oil. Almost like a ceviche without fish.
** Bonus tip 2: Huancaina sauce, the most popular peruvian beloved sauce, is a mix of white fresh salted cheese, yellow aji (fresh or paste) and olive oil. Put everything in the mixer for 1 minute and don't mess adding another ingredients.
*** Bonus tip 3: If you are ready for going far beyond, try the same recipe but with manioc (yuca) instead of potatoes in the dough, or a mix of them! It is really incredible!!!

Guiso de Vainitas / Greenbeans Stew
Rico, saludable y facil. Este guiso es un clásico de la cocina peruana y es muy socorrido cuando el presupuesto es apretado y el hambre, grande.
Ingredientes
- 1/2 kilo de vainitas (judias verdes tubo)
- 1/2 kilo de papas blancas peladas y cortadas en cubos
- 1 cebolla cortada en cuadraditos
- 2 dientes de ajo picados
- 3 tomates pelados y licuados
- 1 zanahoria en cubitos (opcional)
- 1 cucharadita de aji amarillo
- aceite, sal, pimienta, aji-no-moto, orégano, al gusto.
- 2 tazas de agua hirviendo
Ingredientes

Luego se añade el tomate licuado, las papas con las zanahorias en cubos, sazonar y revolver bien. Tapar y dejar freir unos minutos.
Luego disolver el cubito de caldo en una taza de agua hirviendo y echarselo al guiso, revolver, tapar y dejar cocinar 10 minutos.
Mientras cogemos las vainitas y las vamos cortando en trozos de 2 a 3 cm de largo, eliminando las puntas.
Cuando estén listas se añaden a la olla, echar la segunda taza de agua, probar la sazón y corregir, si cabe. Tapar y dejar 20 minutos mas.
Servir caliente con arroz blanco.

Preparación

- white rice, boiled
Preparation
Fry the onion and garlic in a pan, when it is gold brown add the aji paste, mix and let it toast a bit. Then add the tomato puree, potato and carrot cubes, mix everything, season with salt, pepper and ajinomoto (optional), then cover and cook some minutes. After that solve the broth tab into one cup of boiling water and pour over. Mix and let it cook for 10-15 minutes more.
In the meanwhile, wash the green beans and cut them about 1" long and eliminating the edges. When finished add them to the stew, with the second cup of boiling water, taste and adjust the seasoning, low the fire, cover and cook for 20 minutes more.
Serve it warm with white rice. Let's eat!!

Causa Limeña / Limenian Causa (cold veggie potato pie)
La causa limeña consiste en un pastel frío de patata prensada que se rellena con verduras (también con pollo, mariscos o pescado) y decorado por encima, se sirve normalmente como entrante.
- zumo de una lima o limón verde
- 1 cucharada de aji amarillo molido
- un buen chorro de aceite vegetal suave
- sal, pimienta
Relleno:
- una cebolla roja pequeña, picada en cuadraditos y marinada en zumo de limón.
- un puñado de alverjitas (guisantes), cocidas o de bote
- un par de zanahorias cocidas y picadas en cubitos
Cubierta:
- aceitunas negras
- 1 huevo cocido y cortado en rodajas
- crema huancaína o mayonesa.
Acompañamiento
- hojas de lechuga
- una mazorca de maiz troceada
Preparación
Las papas se cuecen y se aprietan con un pasapuré, mezclar con el aceite, el ají molido y el zumo de limón, sazonar al gusto. Debe quedar una masa que se pueda moldear. Cortar la mitad y aplanar sobre una fuente o molde engrasado o cubierto con papel manteca.
Aparte hacer una ensalada tipo rusa con la cebolla y su jugo de limón, el resto de verduras y la mayonesa, sazonar al gusto. Verter esta ensalada como relleno sobre la capa de beterraga.
Luego colocar encima de la ensaladilla las rodajas de aguacate y después repartir la otra mitad de la masa de patata, cuidando de tapar bien el relleno logrando una superficie plana y lisa. Ahora la causa se puede o bien desmoldar o dejar en la fuente.
Para el adorno, untar la superficie con un poco de crema picante -o si hay arte y paciencia hacer figuras con una manga decorativa-, colocar alternadamente los trozos de huevo duro, las aceitunas, unas rajas de ají o pimiento rojo y espolvorear con perejil.
Se puede poner a la refrigeradora para que esté mas fresquita. Servir con hojas de lechuga y opcionalmente una rodaja de choclo.

- 1/2 kilo yellow potatoes, if available, or other type of soft, puree potatoes is also ok.
- juice of 1 lime (green lemon)
- 1 spoon of yellow aji paste
- vegetal oil (soft taste)
- salt, pepper
Filling:
- 1 onion, finely chopped and marinated in lime juice
- 1 handful of peas
- 2 carrots, boiled and cut in small cubes
Ingredientes (4p)
- medio kilo de papas, si es posible amarillas y sino pues cualquiera para hacer puré.- zumo de una lima o limón verde
- 1 cucharada de aji amarillo molido
- un buen chorro de aceite vegetal suave
- sal, pimienta
Relleno:
- una cebolla roja pequeña, picada en cuadraditos y marinada en zumo de limón.

Las papas se cuecen y se aprietan con un pasapuré, mezclar con el aceite, el ají molido y el zumo de limón, sazonar al gusto. Debe quedar una masa que se pueda moldear. Cortar la mitad y aplanar sobre una fuente o molde engrasado o cubierto con papel manteca.
Sobre esta capa distribuir las rodajas de beterraga de forma que hagan una capa cubriendo toda la superficie de la patata.
Aparte hacer una ensalada tipo rusa con la cebolla y su jugo de limón, el resto de verduras y la mayonesa, sazonar al gusto. Verter esta ensalada como relleno sobre la capa de beterraga.
Luego colocar encima de la ensaladilla las rodajas de aguacate y después repartir la otra mitad de la masa de patata, cuidando de tapar bien el relleno logrando una superficie plana y lisa. Ahora la causa se puede o bien desmoldar o dejar en la fuente.
Para el adorno, untar la superficie con un poco de crema picante -o si hay arte y paciencia hacer figuras con una manga decorativa-, colocar alternadamente los trozos de huevo duro, las aceitunas, unas rajas de ají o pimiento rojo y espolvorear con perejil.
Se puede poner a la refrigeradora para que esté mas fresquita. Servir con hojas de lechuga y opcionalmente una rodaja de choclo.

This starter is like a cold, veggie shepherd pie, a mix of fresh vegetables (or chicken, fish, sea-food, etc.), hidden between two layers of smashed potato and top decorated.
Ingredients 4p
- 1/2 kilo yellow potatoes, if available, or other type of soft, puree potatoes is also ok.
- juice of 1 lime (green lemon)
- 1 spoon of yellow aji paste
- vegetal oil (soft taste)
- salt, pepper
Filling:
- 1 onion, finely chopped and marinated in lime juice
- 1 handful of peas
- 2 carrots, boiled and cut in small cubes
- 1 handful sweet corn
- 1 beetroot, boiled and sliced
- 1 avocado, peeled and sliced
- 1/2 red pepper, cut in small squares
- several tablespoons mayonnaise (can be mixed with nat. yoghurt to make it lighter)
- salt and pepper
Coverage:
- 1 boiled egg, sliced
- black olives
- parsley, chopped finely
- huancaina sauce or similar spicy sauce
Side complements
- Green salad leaves
- Boiled corn chunks (optional)
Preparation

Apart, make like a russian salad, mixing the remaining vegetables with the mayonnaise in a bowl, seasoning as desired. This salad goes top over the beetroot layer. After the salad put the avocado slices on, then its time to cover everything with the rest of the smashed potato dough, trying to get an even surface. Now the causa can be turn down out of the form or stay in, as you like.
Pour some spicy cream over the top surface and decorate with egg slices, black olives and sprinkle some chopped parsley. You can put it in the fridge before serving to keep it fresh.
You serve it with a leaf of green salad and a chunk of boiled corn as option.

Tajine de Verduras con Quinua / Veggie Tajine with Quinoa
Maravilloso plato de la cocina marroquí, matizado con ingredientes peruanos para obtener esta fusión deliciosa y super saludable. No hace falta tener un tajin se puede hacer en dos ollas separadas o tambien en nuestra peruanisima olla de barro.

Ingredientes (4p)
- 1 taza de quinua
- 3 papas blancas (grandes) peladas y cortadas en 4 a lo largo.
- 3 zanahorias grandes, ídem
- 1 calabacín, cortado en 8-12 gajos, segun tamaño.
- 1 cebolla mediana, cortada en 8 gajos gordos
- 2-3 dientes de ajo
- aceite de oliva, 2 cucharadas
- sal, pimienta y 1 cucharada de ras-el-hanout (comino+ curcuma o palillo +pimenton + canela molida)
- medio litro de caldo de verduras (o un cubito disuelto en medio litro de agua hirviendo)
- dos cucharadas de concentrado de tomate o aji colorado si se desea un toque picante.
- una tacita (150gr.) de garbanzos remojados 1 noche o cocidos de bote
- una docena de dátiles
- un puñado de pasas
- cilantro picado al gusto
Preparación
La quinua se lava bien y se pone a hervir en abundante agua por unos 15 minutos; retirar y colar (¡¡¡no tirar el agua!!! Es una bebida energética excelente). Extender la quinua seca en una fuente grande. Reservar.
Aparte en una olla grande freir la cebolla y el ajo con el aceite. Una vez dorado añadir el concentrado de tomate o aji colorado y tostar ligerente. En seguida echar el caldo de verduras y los condimentos, remover y entonces ahí pondremos a cocer las verduras, primero patatas, garbanzos (si son remojados) y zanahorias, tapamos y dejamos unos 20 minutos a fuego suave, luego añadimos el calabacín y dejamos cocinar 10 minutos mas. Las verduras tienen que estar blandas pero sin deshacerse.
En este punto agregar el cilantro picado, los garbanzos (si son de bote) y los dátiles y/o pasas.
Retirar del fuego y servir sobre la quinua, primero los trozos de vegetales intercalados y luego rociar con el caldo, los garbanzos, pasas y dátiles por encima.
Simplemente exquisito!

- 3 big carrots, idem
- 1 zucchini, with skin, cut into 8-12 long pieces
- 1 onion, medium size, cut in 8 pieces
- 2 cloves garlic
- 2 tablespoons olive oil
- salt, pepper
- 1 tablespoon of ras-el-hanout (cumin, paprika, turmeric, cinnamon powder)
- 1/2 lt. Vegetables stock
- 2 tbsp. Tomato paste or red ají* paste, for an spicy touch
- 1 cup (150 g.) of chickpeas, moistened in water or cooked (canned)
- 1 handful raisins
- 12 dates
- fresh coriander, grated. As desired.
Preparation
Wash the quinoa seeds with a lot of fresh water, until it releases all its 'foam' (saponine). Then cook it in boiling water for 15 minutes. Drain (but don't throw the quinoa water, it's a highly energetic beverage!!), extend onto a big salad dish and save for later.
Apart, in a pan with hot oil fry the onion and garlic. When they change to transparent color add the tomato or red aji paste, mix and fry a bit more; then pour in the stock, when it is boiling put the potatoes, carrots, chickpeas (if moistened), cover and cook on low fire for about 20 min. After add the zucchini pieces and cook 10 min. more, until they are soft but not smashed, we need them whole!
When achieved, set the fire off and mix with the chickpeas (if canned), coriander, raisins and dates. Serve warm over the quinoa dish, first the veggie chunks and then pour some stock with the chickpeas and dry fruits over.

Souflé de Camote / Sweet Potato Soufflé
En medio de la cultura del derroche, apelamos a aprovechar los alimentos -dentro de lo razonable- que de otro modo se irían al tacho. En ese aspecto nuestras abuelas, que vivieron tiempos peores, idearon por ejemplo con cascaras de fruta ricas bebidas y compotas, o deliciosos aderezos con visceras, sopas con huesos, etc.
Hoy usaremos la masa y fibra vegetal que ha quedado en el extractor de jugos de esta mañana: zanahoria, manzana y apio, junto con otras verduras y proponiendo el camote o boniato como medio de cohesión de este rico soufflé.
Ingredientes
- 1 camote grande, pelado, cocido y machacado
- 1 taza de leche
- 2 cucharas de mantequilla
- 1 taza de restos vegetales (o sino pulpa de vegetales rallada)
- 1 cebolla, cortada en cuadritos
- 1 diente de ajo, picado fino o molido
- 1/2 poro o puerro, picado fino
- 1/2 pimiento rojo, en cuadritos
- 3 huevos, separados en yemas y claras
- aceite de oliva, sal, pimienta, nuez moscada
- un trozo de queso parmesano u otro pra rallar
Preparación
Hacer un puré con el camote, la leche, la mantequilla y los condimentos. No se preocupen si queda aguado. Reservar.
Aparte en una sartén saltear en aceite: la cebolla, el ajo, el puerro y los pimientos.
Una vez listo mezclarlo con el puré, con los restos vegetales y las 3 yemas.
Las claras se batirán a punto de nieve y se integrarán a la mezcla con movimientos envolventes, de preferencia con una espátula de madera.
Enseguida hay que poner la masa en un molde engrasado previamente y al horno 180 °C por 30 minutos. Luego sacarlo y rallar el queso por encima, volver al horno 5 minutos mas en modo "Gratinar".
La gracia es servirlo de inmediato, que estará "soplado" como su nombre indica.

In times of wastage culture, lets come back to our grandma's lessons, as they used their cleverness to extract the most of the food on difficult times, they did delicious potages and stews with rests of meat, bones, vegetables, old bread, beverages with fruits skin, etc.
In this case, we propose to use the remains of our juice extractor (carrot, celery, apple) together with other vegetables and sweet potato as medium of cohesion for this suculent soufflé.
Ingredients
- 1 sweet potato, cooked, peeled and smashed
- 1 cup of milk
- 2 sp. Butter
- 1 cup vegetables remains (or grated if preferred)
- 1 onion, chopped
- 1 clove garlic, chopped or smashed
- 1/2 leek, cut finely in rings
- 1/2 red pepper, cut in small squares
- 3 eggs, separated in whites and yolks
- olive oil, salt, pepper, nutmeg powder
- a chunk of parmesan cheese or another grated cheese
Preparation
Make a puree with the smashed sweet potato, milk, butter and seasonings, do not panic if it becomes too liquid, put aside and let it cool down a bit.
Apart, in a pan with olive oil, fry slightly the onion, garlic, leek and red pepper, add to the puree together with vegetable remains and the egg yolks, mix well and put aside.
In a sepatate clean bowl, blend the egg whites to hard cloud and add them to the mix stiring with a wood spoon and inmediately after put into a greased baking form which goes to pre-heated 180°C oven for 30 minutes. Get out and grate some cheese over then put it back into the oven for 5 minutes more in "Gratin" mode.
Serve warm directly from the oven then it will look "blown"... as its name means.
